I was reminded yesterday of a delicious breakfast that my mom used to make for me on a regular basis. “Eggs In A Nest”. As a kid, I loved this meal because it was different, yet still tasted delicious. As an adult, I love this meal because it’s possibly the easiest meal to prepare ever. Okay, maybe not ever, but it’s really easy! Your kids will love it, and so will you. In fact, it’s so easy that you can even make this on busy mornings that you don’t have much time. All you’ll need is a little butter, bread, egg and a champagne flute.

Eggs In A Nest

Here’s what you do:

Start off with two slices of bread and two eggs. Butter one side of each slice of bread. Cut a hole in the middle of each slice of bread using the champagne flute. Place the bread in a buttered skillet and heat on medium. Crack an egg in the hold of the bread and let it cook for a couple of minutes, allowing the egg to form. After it’s cooked a bit, turn the bread over and cook on the other side. Top with some salt and pepper, and you’re done. It’s just that easy! Serve it on a plate along with the middle that was cut out. The middle is great for dipping in the yolk of the egg. Try it, and I’m sure you will agree, this is one egg you won’t want to let out of the nest!
